We were very intrigued to know who would win this year’s SIAL Grand Prix. If one thing is clear, it is that the short-list of candidates is a statement of intent of what the organization and the judges consider to be relevant in terms of market and consumer (and also in terms of country).
A new disruptive technology? A new plant-based invention?
Nothing could be further from the truth.
Today I bring you the case of Sabarot, Une Gallete Végétal.
In the heart of France is the Auvergne region where after 7 generations Sabarot is the specialist in vegetables, cereals and mushrooms with easy to cook and tasty preparations. Good, healthy and natural products that provide vegetable proteins with the firm promise to contribute to the preservation of biodiversity and partnership contracts with local farmers.

The pack contains 170g of a mix of legumes and cereals prepared to soak in 200ml of hot water to obtain a dough that can be shaped as a Galette (vegetable burger type) 4 pieces or as a meatball or falaffel, 12 pieces. With 100% natural ingredients, no added salt and no additives.

The first range is available in 3 varieties: Peas with Basil, Trio of Indian Lentils, Quinoa and Bulgur with sun-dried vegetables, with a price per pack of 3.20€.

In 2023, Sabarot inaugurated its new facilities after an investment of 20 million euros that will allow it to reinforce its innovative positioning and leadership in the vegetable agri-food industry. This product was conceptualized as a new way of providing an outlet for its raw material and, in the words of its export manager Sarah Albenesius, it is part of its strategy of growth and export of gourmet, healthy, sustainable, convenience and competitive products.

We spoke with Sarah about the challenge of this development for Sabarot and the impact of winning a SIAL Grand Prix and the growth potential for the brand and this type of preparation where key aspects for the food industry converge.
The truth is that we have already tried it at home and it is one of those foods that make you feel good, that the whole family likes and that is easy, fast and nutritious.
